The Words That Tell You Whether Food Is Still Safe to Buy, Store, Prepare, Serve or Throw Away

Food safety vocabulary is not the same job as nutrition vocabulary. Nutrition asks what a food contains and how it fits a diet. Food safety asks whether the food may expose someone to harmful bacteria, viruses, toxins, allergens, chemicals or physical contamination—and what actions reduce that risk.

This article teaches one hundred practical terms for household food safety. It focuses on buying, storing, handling, cooking, leftovers, illness and recalls. 11–20 · Time and Temperature Control

  3. Frozen food — food kept at temperatures low enough to remain frozen.
  4. Cold chain — continuous temperature-controlled storage and transport for chilled or frozen food.

  5. Raw meat juice — liquid from raw meat that can carry microorganisms onto hands, shelves or other foods.
  6. Marinade — seasoned liquid used to flavour food; marinade that contacted raw meat should be treated as contaminated unless safely cooked.
  7. Dedicated utensil — a tool reserved for a particular food or stage of preparation to reduce cross-contamination.
  8. Ready-to-cook — food prepared for cooking but not necessarily safe to eat without the required cooking step.
  9. Ready-to-serve — food prepared for immediate service, usually without another hazard-reduction step.
  10. Cross-contact — unintended transfer of an allergen from one food or surface to another.

41–50 · Storage, Shelf Life and Date Marks

  1. Shelf life — the period during which food remains suitable under stated storage conditions.
  2. Expiry date — a date mark indicating the end of the manufacturer’s stated period for the product under specified conditions.
  3. Best before — a date mark commonly linked to expected quality; the exact legal meaning and handling should follow local regulations and product guidance.
  4. Use by — a date phrase used on some foods to indicate a stated period for use; follow the manufacturer’s and local authority’s instructions.
  5. Sell by — a date phrase used in some systems for retail stock control rather than as a universal consumer safety rule.
  6. Packing date — the date on which food was packed; SFA notes that some fresh or chilled raw meat and fish may display a packing date.
  7. Perishable — likely to spoil or become unsafe relatively quickly unless properly stored.
  8. Shelf-stable — capable of being stored safely at room temperature while unopened under the stated conditions.
  9. Storage instruction — directions such as “keep refrigerated” or “store in a cool, dry place” that form part of safe handling.
  10. First in, first out (FIFO) — using older stored food before newer stock so items are less likely to be forgotten past their useful life.

51–60 · Packaging and Product Condition

  1. Sealed package — packaging closed as intended by the manufacturer.
  2. Tamper-evident — designed to show visible evidence if a package has been opened or interfered with.
  3. Damaged packaging — packaging that is torn, punctured, leaking, open or otherwise compromised.
  4. Swollen can — a can bulging outward, which can be a warning sign and should not be consumed.
  5. Dented can — a can damaged by impact; deep dents, especially near seams, can compromise safety.
  6. Rusty can — a can with corrosion that may weaken packaging integrity.
  7. Leak — unintended escape of liquid or gas from packaging.
  8. Vacuum-packed — packaged with much of the air removed to extend quality or shelf life under controlled conditions.
  9. Package integrity — whether packaging remains intact enough to protect the food as intended.
  10. Seal failure — loss of the intended airtight or secure closure of a package.

61–70 · Buying and Preparing Food Safely

  1. Licensed food premises — a food business operating under the relevant licensing framework.
  2. Source — where the food came from, including retailer, importer, producer or supplier.
  3. Traceability — the ability to identify where a product came from and where it went.
  4. Freshness — the condition of recently produced or prepared food; freshness alone does not prove microbiological safety.
  5. Spoilage — deterioration that makes food unpleasant or unsuitable, often shown by smell, texture, colour or mould.
  6. Mould — fungal growth visible on some foods; safe handling depends on the food type and extent of growth.
  7. Off odour — an unusual or unpleasant smell that may signal spoilage.

  9. Load line — the marked level in some refrigerated displays below which food should be stored to maintain proper airflow and cooling.

  6. Dehydration — loss of body water and salts, a potential complication of vomiting or diarrhoea.
  7. Vulnerable group — people more likely to suffer severe consequences from foodborne illness, depending on age, pregnancy or health status.
  8. Immunocompromised — having reduced immune-system function and therefore potentially higher infection risk.
  9. Medical attention — professional healthcare assessment when symptoms are severe, persistent or concerning.
  10. Notification — reporting a food-safety concern or illness to the relevant business or authority where appropriate.

81–90 · Recalls, Batches and Consumer Advisories

  1. Recall — removal of an affected food product from sale or use because of a safety or compliance concern.
  2. Implication — identification of a specific product as affected by the stated safety issue.
  3. Implicated product — the exact product named in a recall or advisory.
  4. Batch — a quantity produced under defined conditions and identifiable for traceability.
  5. Lot — a traceable production group identified by a code or number.
  6. Importer — the business that brings the food product into Singapore.
  7. Distributor — a business that supplies products onward to retailers or other customers.
  8. Point of purchase — the shop, platform or business where the consumer bought the food.
  9. Consumer advisory — official information telling consumers about a food-safety issue and recommended action.
  10. Product withdrawal — removal of a product from the supply chain; the reason and legal meaning may differ from a formal safety recall.

91–100 · Allergen and Risk-Control Language

  1. Undeclared allergen — an allergenic ingredient present in food but missing from the required label declaration.
  2. Hypersensitivity — an exaggerated biological response to a substance, including some allergic reactions.
  3. Food allergy — an immune-mediated reaction to a food or food component.
  4. Food intolerance — an adverse response to food that is not necessarily immune-mediated.
  5. Ingredient list — the label section identifying ingredients used in the product.
  6. Allergen declaration — label information identifying specified allergenic ingredients as required.
  7. Precaution — an action taken to reduce risk before harm occurs.
  8. Safe handling — the combined practices used to store, prepare and serve food with reduced risk.
  9. Discard — deliberately throw food away when it is unsafe, suspect or no longer suitable.
  10. Leftover — cooked or prepared food not eaten at the original meal and stored for later use.

Seven Distinctions That Prevent Unsafe Assumptions

Freshness vs safety

Food can look fresh and still contain pathogens. Food can also lose quality without immediately becoming dangerous. Sight and smell are useful but not complete safety tests.

Cleaning vs sanitising

Cleaning removes dirt and food residue. Sanitising reduces microorganisms after the surface has been properly cleaned.

Raw vs ready-to-eat

Raw food may receive a later cooking step. Ready-to-eat food may not. Contamination of ready-to-eat food therefore has fewer opportunities to be removed.

Food allergy vs intolerance

An allergy involves the immune system and can become severe. An intolerance can cause significant symptoms but works through different mechanisms.

Expiry date vs packing date

A packing date tells you when food was packed. It does not necessarily tell you how long the food remains suitable.

Recall vs every product from the brand

Recalls usually identify specific products, pack sizes, batches, production dates or best-before dates. Match the details before deciding what is affected.

Refrigeration vs sterilisation

Cold temperatures slow many microorganisms. Refrigeration does not sterilise food or make previous contamination disappear.

Diagnosis Before Prescription

“It smells fine, so it must be safe.”

Diagnosis: sensory quality has been mistaken for microbiological safety.
Repair: also check storage temperature, time, date marks, packaging condition and recall notices.

“I washed the knife with water, so I can cut cooked food now.”

Diagnosis: rinsing has been mistaken for adequate cleaning.
Repair: wash food-contact equipment properly and avoid moving raw-meat contamination onto ready-to-eat food.

“The brand was recalled, so everything from the brand is unsafe.”

Diagnosis: brand identity has replaced batch-level traceability.
Repair: match product name, size, batch, production or best-before information against the official advisory.

“Frozen food cannot contain harmful bacteria.”

Diagnosis: growth control has been mistaken for elimination.
Repair: thaw and cook safely; freezing does not reliably destroy every pathogen.

Singapore Context in 2026

SFA’s August 2026 consumer guidance emphasises intact packaging, correct chilled and frozen storage, separation of raw and cooked food, thorough cooking and reducing time in warm conditions. SFA also describes 5°C to 60°C as a temperature range in which bacteria can thrive.

Recent Singapore recalls show why traceability vocabulary matters. In 2026 SFA issued recalls involving undeclared sulphur dioxide in imported products. The advisory did not say that every food from the brand or importer was unsafe; it identified specific implicated products and explained which consumers faced particular allergy or hypersensitivity risks.
