Unopened shelf-stable UHT milk can stay at room temperature until the date on the carton when stored as directed. Chilled pasteurised milk needs refrigeration from purchase onwards. Once you open UHT milk, refrigerate it and follow the carton’s instructions for how soon to finish it.
Choose according to how often you use milk and how much fridge space you have. For nutrition, compare cartons of the same kind, such as plain full-cream with plain full-cream. The words UHT and pasteurised describe how the milk is processed. Use the label to compare protein, calcium, sugars and saturated fat.
- Check whether the unopened carton is sold as shelf-stable or chilled.
- Refrigerate opened UHT milk and follow the pack’s time limit.
- Compare nutrients per 100 mL before calculating your serving.
- Buy a carton you can finish once it is open.

Read the storage instructions before shopping
UHT means ultra-heat-treated. SFA explains that unopened shelf-stable UHT milk can be stored at room temperature until the expiry date. Pasteurised milk sold chilled belongs in the refrigerator. Keep the milk in the conditions stated on the carton, and bring chilled milk home promptly. SFA’s food safety glossary
| Situation | Choose or do this |
|---|---|
| A pantry backup | Buy unopened milk specifically labelled as shelf-stable |
| Milk sold from a chilled cabinet | Keep it chilled and check the storage instructions |
| An opened UHT carton | Refrigerate it and follow the opening directions |
| Milk for one packed break | Consider a sealed shelf-stable single-serving pack if the label allows |
| A swollen or leaking carton | Avoid buying or using it |

Compare nutrients using the same kind of milk
Start with the fat level and flavour. A plain low-fat carton and a sweetened full-cream carton differ in more ways than processing. Check protein and calcium separately. When both panels give figures per 100 mL, use those for comparison and multiply for the glass you actually pour.
For example, a product with 3.3 g of protein and 120 mg of calcium per 100 mL provides 6.6 g of protein and 240 mg of calcium in a 200 mL glass. These are example numbers. Plain dairy milk naturally contains lactose, so total sugar may appear on the label even when there is no added sugar. Check the ingredients if you are comparing plain and flavoured milk. Plan around the opened carton
SFA’s glossary gives general advice to keep opened UHT milk chilled and consume it within a week. Follow the manufacturer’s directions if they specify a shorter period. Mark when you opened it if several people share the carton. The unopened expiry date does not give the shelf life after opening. SFA’s guide to food dates and storage instructions
If you pour a small splash into coffee each morning, a smaller carton may suit you. If several people use milk for oats or breakfast, a larger carton may be practical. A sealed backup helps when shopping plans change, provided it is a product intended for room-temperature storage.

Keep chilled milk cold on the way home
Buy chilled milk near the end of the shop and take it home promptly. If the trip is long, use an insulated bag with suitable cold packs. Refrigerate it when you arrive. Avoid using a swollen or leaking carton even if the date is still ahead. If you cannot establish safe handling for milk that needed chilling, do not taste it to check. Common UHT and fresh milk questions
Does UHT milk need chilling after opening?
Yes. Put it in the refrigerator and follow the carton’s storage and timing instructions.
Does fresh milk mean raw milk?
Chilled fresh milk in this comparison means pasteurised milk. SFA says raw liquid milk is not allowed to be sold in Singapore. SFA’s guide to raw milk
Is a large carton always better value?
Check how much you can finish after opening. A smaller carton can cost less per amount used.
